Ratafia Russet is a digestive liquor made with green young walnuts macerated with schnapps (alcohol), aromatic herbs, roots, and spices from the area.
 
Based on a ritual that aims to achieve a palatable liqueur with medicinal and digestive properties. Its preparation essentially depends on the aromatic plants, spices and fruits available in the area where it is made, although the main ingredient is green or tender walnuts, although the recipes are something jealously guarded and that is only transmitted from parents to children. The elaboration of the ratafia is a process in which rituals, beliefs towards the healing powers of plants, alchemy and an esoteric aura that make ratafia a drink full of mysticism are mixed.
