The first recipe recovered by Francesc Rosquellas is a simple ratafia, very fresh and with an aroma that lingers in the mouth. A good representation of the taste of the most genuine homemade ratafies.
The tetralogy of Santa Coloma de Farners is, to date, the oldest known ratafia recipe. Dated to 1842, they come from the handwriting of Francesc Rosquellas, a tavern keeper from the town, who wrote them down in his notebooks.

Currently, the Confraternity publishes the four ratafies with the Sobirana Cooperativa at the Obrador de Ratafies in Santa Coloma de Farners, in order to spread the knowledge of these wonderful recipes kept in the Selva County Archives.
