Ideal with dishes based on rice and fish, it combines well with the classic paella.

Harvest time begins in the second half of September, in the vineyards around Penedès. The harvest is done by hand, and the grapes are carefully chosen from the healthiest and most mature. Once in the cellar, they are first de-stemmed and then lightly squeezed. The flower must is poured into large stainless steel tanks, where it begins to ferment on the lees. At the end of this phase, the wine is left to rest for a few months in oak barrels, to acquire body and aroma. Finally, it is bottled and ready to be put on the market.
